Vegan Orange Green Smoothie

Vegan Orange Green Smoothie: Before going into this orange green smoothie recipe, let me share with you all a brief history behind this recipe and many more to follow here in future. Recently a couple of things happened one after the other or rather simultaneously and now I'm in the mindset to try a lot of recipes from Joel Furhman's cookbook Eat to Live.

This is how it all started, I recently watched the movie Julie and Julia. For those who are not aware, it is a movie about a woman named Julie who loves cooking and aspires to cook all the 524 recipes from Julia Child's cookbook in 365 days and blogs about it. As for me I'm constantly in the "have to lose weight" zone and stumbled upon the Eat to Live book in one such Facebook group and immediately placed a hold in my library to see what it was all about.

Once I started reading it, the recipes seemed doable because it was all vegan mostly. The recent influence of the movie made me think why don't I try as much recipes as possible from this book. I have a huge collection of cookbooks and I hardly try 1 or 2 recipes from each, skip to another book and they all just sit in the shelf in the end.

I wanted this time to be different and have decided to try new recipes only from this book. I don't have a time deadline or anything, but would see if I can make at least few recipes from this Eat to Live cookbooks. I'm saying cookbooks because I found 2 in the library. One has 131 recipes and the other has 200 recipes and some are repetitive.

Now that I have rambled enough about my "I don't know how long this is going to last" phase of mine, let me share this spinach and orange green smoothie recipe I tried first.

This is supposedly a blended salad recipe, but those who know me can tell that I rarely follow recipes to the "T" and make some changes to suit what I have available in hand. The recipe calls for a blood orange vinegar which I didn't have and wasn't brave enough to add the balsamic/apple cider vinegar I had, so it turns out to be a vegan orange green smoothie instead.

Vegan Orange Green Smoothie

Tired of the same old banana spinach green smoothie over and over. Try this citrus spiked, creamy orange green smoothie for a change. It's light and refreshing yet keeps you full without making you feel bloated.

Ingredients

  • ½ cup unsweetened almond milk
  • ¼ cup water
  • 2 small oranges
  • 1 cup chopped romaine lettuce
  • 1 cup baby spinach
  • 2 teaspoons vanilla extract
  • 10 whole raw cashews
  • 1 tablespoon flaxseed meal (optional)
  • As needed few ice cubes

Instructions

  • Put all the ingredients in a high powered blender and blend until smooth and creamy.

My Notes

  1. Flaxseed meal was not mentioned in the recipe. I tasted the smoothie without it and it definitely tasted better without the flaxseed but later add that too and blended it again and this had a different taste which I have got used to already after years of drinking green smoothies with flax seeds, chia seeds etc. So if you are a green smoothie newbie I would suggest omitting it and just try this orange green smoothie without the flaxseed.
  2. If you prefer the smoothie a bit sweet add 1 or 2 dates. Again I like my green smoothies even if it is not sweet.
  3. If you want to try the original recipe you will have to add 3 tablespoons of blood orange vinegar.
  4. The recipe says it serves 2, but half of it won't be sufficient for breakfast for an adult. So I drank it all for breakfast. It exactly measured to 500 ml. The nutrition information is for 1 serving though. So if you drink the entire batch double the calories and other nutrients.
  5. Use any non-dairy milk of your choice.
  6. I wouldn't substitute anything else for the cashews because it gives a creamy taste and texture to this vegan green smoothie.
